If you were on death row, what would you request for your last meal? My preference would be thin-cut chicken parmigiana. All the elements are magically fused in this dish—it’s crunchy, tender, cheesy, and lightly sweet. Add a side of spaghetti, plus a glass of silky Pinot Noir, and you’re already on your way to heaven.

 

The chicken parm remains top shelf at Aromi in Summerlin North, thanks to chef-owner German Castellanos, who was executive chef for many years at the old Valentino’s at the Venetian. You also owe it to yourself to try it at LAVO at the Palazzo tower in the Venetian where the exceptional and strikingly plated chicken parm delivers the necessary thrills.

Pair the dish with a side of spaghetti or maybe even with bites of the dreamy/creamy pappardelle veal bolognese if your guest orders that. Enjoy it amid the high-ceiling restaurant’s theatrical and softly lit setting where you’ll look ageless and feel priceless.

 

LAVO has been going strong since 2008, although it no longer uses the screened second story nightclub lounge. Weather permitting, the outdoor terrace overlooking The Strip is the place to be. It’s interesting to note that the Angelenos who loved LAVO will now have to visit Vegas to enjoy the restaurant’s charms since the one in LA closed at the end of December.
